A Steward is an invaluable part of the service team ensuring that the smallwares and plateware is washed, sanitized and ready throughout service. They will act as an essential part of the restaurant working in the background to keep service flowing smoothly. Daily Responsibilities:
- Clean and sanitize plates/dishes/pans and smallwares throughout each shift, ensuring that all items are cleaned and put away at the end of each shift
- Orchestrate the proper cleaning and sanitation of the kitchen
- Additional cleaning responsibilities include the organization of the plateware/pots and pans as well as coolers and storage rooms.
- Report to the Executive Chef, Chef de Cuisine or Sous Chef and receive lists from them for cleaning duties for the kitchen.
- Sweep each walk-in at the end of each shift.
- Assist in the cleaning of the kitchen on a daily basis.
- Assist with gathering necessary utensils, plates, etc. for every service
- De-grease ovens.
- Rotate through each walk-in to ensure each one is clean and sanitized.
- Keep immediate supervisor advised of any maintenance issues. Follow the monthly cleaning schedule.
- Remove dirty linen bags, trash, bus tubs and glasses as needed
- Assist with cleaning of service areas to include sweeping, mopping, trash removal as needed
- Other duties as assigned
